In case you missed my note last week, I have challenged myself to try one new recipe each week this year (my year — birthday to birthday — not calendar year). For my first experiment I turned to Cooking Light Magazine. I have been a reader/subscriber for several years and a couple of my favorite “go-to” recipes have come from Cooking Light. So, this week I invited some friends over and made Penne with Chickpeas, Feta, and Tomatoes. It was awesome! Naturally, I tweaked the recipe a bit (orange instead of red bell pepper and increasing the ingredients slightly to serve 5 instead of 4). This recipe was fresh and light and cooks in a snap. The entire table of ladies gave it a thumbs up (or, in the case of one diner “I didn’t even have to use hot sauce!).
